My mom came over the other night and brought some homemade Vietnamese food. I am super lucky that my mom is a great cook and I crave her cooking often! Growing up, she was always cooking us meals from scratch with fresh ingredients even while working full time with 3 kids. She made sure we were all cared for. I have the fondest memories of her food because it represents our culture and her love. I definitely get my love of cooking and eating from her! She has been teaching me here and there.
Mom made Cha Cua which is a Vietnamese baked egg loaf with crab. It is light and fluffy with great texture, and the crab adds density. It is served over broken rice, with pickled carrots and radish (duo chua), and green onions marinated in oil. This dish is also served with fish sauce (nuoc mam).
