Roasted Red Pepper Penne by @eatwithclarity 🧡

Ingredients:
2 red bell peppers
1 red onion
4 large cloves garlic
1/2 cup cashews (soaked overnight)
1 cup plain unsweetened almond milk
1 tbsp arrowroot powder (or cornstarch)
2 tbsp nutritional yeast
1 tbsp tomato paste
1/2 tsp sea salt (or to taste)
Black pepper to taste
1-2 tbsp olive oil (can omit if oil-free)
Instructions:
Preheat the oven to 350 degrees Fahrenheit.
Peel the garlic, and chop the onion and bell peppers into large chunks.
Roast on a silicone baking mat or parchment paper for 30 minutes.
While the veggies are cooking, cook about 12 ounces of your pasta of choice.
When the veggies are done, add to a blender or food processor with the drained cashews and all remaining ingredients aside from arrowroot and nutritional yeast and process until completely smooth.
Transfer to a large skillet and whisk in the arrowroot powder and nutritional yeast until smooth.
Stir in the pasta, and top with more salt & pepper if desired. #bestofvegan.

FOCACCIA INTEGRALE con POMODORINI 🍅facilissima, alta e sofficissima! Sono sicura che piacerà a tutti 😍 
INGREDIENTI e PROCEDIMENTO:
250 g di farina 0
250 g di farina integrale
sale a piacere
7 g di lievito di birra disidratato
un cucchiaino di zucchero
430 ml di acqua
pomodorini a piacere
olio d'oliva
origano q.b 🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸
In una ciotola uniamo la farina bianca con la farina integrale e il cucchiaino di zucchero. Mescoliamo bene e aggiungiamo anche il sale. Uniamo l'acqua un po' alla volta e mescoliamo. A questo punto uniamo due cucchiai di olio e continuiamo a mescolare. Dobbiamo ottenere un impasto morbido. Aggiuangiamo un po' di farina in superficie e copriamo la ciotola con della pellicola trasparente. Lasciamo lievitare l'impasto per circa 2 ore in un luogo caldo. Va benissimo nel forno chiuso con la lucina accesa. Trascorso il tempo di lievitazione, stendiamo il nostro impasto su una teglia coperta con carta forno e leggermente oliata. Lasciamo lievitare l'impasto per 30 minuti. Trascorso il tempo di lievitazione, la nostra focaccia avrà raddoppiato il suo volume. Uniamo i pomodorini tagliati a metà, condiamoli con olio, sale o origano.
